The Matfer Bourgeat 116605 has been designed to deliver precise portion control of different product consistencies like: Mayonnaise, ketchup, mustard, jellies and fruit paste, syrup and liquors, cream and coulis. The precise portion control in the kitchen or in the pastry shop contributes to better control over food cost and will bring consistency in production. A single pressure on the handle will deliver a precise portion. The portion is easily calibrated up to 2/3 of a fl. oz. (20 cc, capacity of the piston chamber). Depending on the viscosity of the product, the maximum portion will vary between 1/2 oz up to 2/3 oz. The graduated positions on the screw allow setting the portion for chosen recipe, producing the same portion over and over. The funnel is made of poly carbonate and has a capacity of 1-1/2 qt. Resists temperatures up to 250 degrees. The funnel is easily taken apart, without tools, for cleaning. Dishwasher safe. Includes chromed stand.
