Crown DCX-2-6-10 Direct Steam Convection Steamer/Kettle features a direct non-toxic steam, incoming at a minimum of 15 psi (103 kPa) with a flow of 150 lbs (68 kg) per hour, alongside a pressure reducing valve that provides a manifold pressure of 7 psi (49 kPa) per hour, alongside having a cold water supply being 25-50 psi (170-345 kPa), which is required to control the drain temperature. This design allows for a reliable and efficient product.
