This kettle has a 12-gallon capacity to hold products at any temperature from 165 to 285 degrees Fahrenheit. Stainless steel construction in both the kettle and its liner provides rust protection and resists the scratching of serving spoons. A low-water cut-off monitors the steam water level, halting operations if conditions grow too unfavorable.
