Need inspiration for what to make in your Vitamix?

We know. There are recipes everywhere! On their website, off their website, that you can find to use. Because it’s winter (and because the person writing this post just bought a Vitamix), we’d like to give you 10 soup recipes to try. They’re great for if you’re like us and keep a Vitamix at home and at the office as well as if you’re a bar or restaurant looking to expand your menu. They are ideal for lunch or dinner and are a super healthy option for the new year.

1) Zucchini Asparagus and Pea Soup

Lots of veggies in that title! It looks refreshing and healthy too. Just look at that beautiful green color!

It contains chicken broth (a must for its hearty, filling taste), asparagus, zucchini, and frozen peas. Add basil leaves, mint leaves, and cilantro leaves for flavor. Salt and pepper to taste and garnish the top with Persian Feta cheese. Start with putting the stock, asparagus, zucchini, peas, basil, mint, and cilantro into the Vitamix container. In that order. Be sure to secure the lid before turning it on. Have to add that to prevent any messes.

Once you’ve turned on the machine and let it blend for 6 to 7 minutes, it will be ready to serve. Each person in my household likes a different amount of salt and pepper, so you may want to leave it for each person to decide for themselves. But definitely add the Feta! Not only does this allow you to control portions, if you’re a restaurant, it also makes the soup more visually appealing.

2) Roasted Root Vegetable Soup

I love this soup! My family and I keep a garden and we often grow turnips and parsnips. This is a great way to use them in a way that tastes fabulous!

This recipe takes a bit more work than just throwing everything into a Vitamix container. After chopping the vegetables, you’ll start by combining the vegetables – carrots, turnips (or parsnips or rutabaga), onions, celery, jalapenos, garlic – and seasoning them with ginger, salt, pepper, and oil. Once this is mixed together, add them to a lined sheet tray and roast them for 20 to 30 minutes.

After they’ve been cooked, set aside some in a separate cup. The rest, it’s blender time! Fill it up with the vegetables, add tomatoes, vegetable stock, and half a can of chickpeas. Secure the lid and start your Vitamix on its lowest setting. Quickly adjust it to its highest or fastest speed. Blend for 5-6 minutes or until heavy steam escapes from the vented lid plug. Begin to lower the speed.

Once it's blending at a slower rate, begin to add kale, cilantro, chickpeas, and the remaining vegetables through the lid plug opening. Blend this for 20 to 30 seconds only! Ingredients will be lightly chopped and incorporated into the soup at this speed.

After this is done, you’re ready to turn the machine off and begin serving the soup! You can garnish it with chickpeas and cilantro leaves.

3) Chicken Potato Spinach Soup

Our vegan and vegetarian friends can shut their ears for this one. I guess they had to for the first one too with the chicken broth, but you could always use vegetable broth instead. This one contains meat though.

For this recipe, you’ll need chicken broth, milk (you can pick between cows’ milk or cashew milk), an onion, russet potatoes, rosemary, spinach, boneless chicken breast, salt, and black pepper. I’ll let you get the instructions from Vitamix for this one, but the best part of it is that it only takes 20 minutes to make! Quick and easy.

4) Apple Acorn Squash Soup

This one sounds amazing. Start by steaming squash in a steamer or microwave until it's “fork-tender,” aka you can poke it with a fork. Sauté onions and garlic in oil until the onions are clear and tender. Once this is done, place these ingredients into your Vitamix container. (For all the ingredients, check out their recipe). Secure the lid and start the blender at the slowest speed, quickly increasing it to its highest speed. Blend for 3 to 5 minutes. Vitamix adds that “By blending ingredients that have just been cooked and are still hot, the blend time is cut by several minutes, bringing dinner to the table that much quicker!”

1 serving (542 g) is 44 carbs and only 240 calories! A healthy choice for any new year resolutions.

This recipe only takes 30 minutes to make. It’s a great lunch choice for restaurants or could even be used as an appetizer.

5) Broccoli Cheese Soup

Containing the milk of your choice, vegetable stock, broccoli florets, black pepper, and cheese, this soup has 4-1/2 stars on Vitamix’s website! It only takes 15 minutes to make and would be ideal for a restaurant promoting health or for marketing to health-conscience customers. You can even replace the cheese with broccoli chunks for vegan customers or those who desire a pure broccoli soup.

It’s super easy to make! Simply place the ingredients into the Vitamix container in the order listed above, start the blender at its slowest speed quickly moving it to its fastest, and blend for 5 minutes and 45 seconds. Pretty precise! If heavy steam escapes from the vented lid before you get to 5 minutes and 45 seconds, feel free to stop it then.

6) Black Bean Soup

This looks so good! Whether you’re serving it as an appetizer or a full meal, it will leave guests or customers more than satisfied. It contains vegetable broth, black beans, chickpeas, onions, garlic, lime, jalapenos, ground cumin, and bell peppers. Add salt and pepper to taste!

It takes 15 minutes to make. Jalapenos may be omitted if you do not want a spicy soup. Roasted corn kernels, extra peppers, and black beans can be added as texture for the soup or extra broth can be added to make it thinner. 7) Tortilla Soup

Hearty and full of flavor, this soup calls for vegetable broth, Roma tomatoes, carrots, celery stalks, onions, garlic cloves, yellow squash, bell peppers, green cabbage, button mushrooms, taco seasoning, ground cumin and salt and pepper to taste. If you want more flavor, you could also add skinless chicken breasts, jalapenos, olives, corn kernels, tortilla chips, and/or cheddar cheese. We definitely recommend adding the tortilla chips to give it an extra crunch.

Vitamix suggests you use black beans, fresh avocado, lime juice, raw spinach, or sliced peppers as a garnish or additional ingredients. Find full recipe details at Tortilla Soup.

8) French Onion and Wild Mushroom Soup

When I was little, my dad used to make French onion soup every winter. Once the weather turned cold and we were snowed in, he’d spend his time cutting onion slices and cooking in the kitchen. It’s a fond memory.

This soup recreates a taste of the past in less than half the time! Taking only 21 minutes to make, this soup contains medium onions, extra virgin olive oil, thyme leaves, salt, ground black pepper, unsalted butter, dry sherry, beef stock or roasted vegetable stock, dried mushrooms, carrots, and chia seeds.

If you would like to spice up the soup, add hot sauce, peppers, or your favorite spice blend.

Serve with crostini and melted Gruyere cheese for more flavor.

9) Cream of Asparagus Soup

Containing cooked asparagus, vegetable broth, salt, black pepper, and half and half, this soup is creamy and delicious. It has a vibrant green color and only takes 16 minutes to prepare. Place the ingredients into the Vitamix container in the order listed above, secure the lid, and start to blend! As before, start at the lowest speed and switch to the highest. Blend for 6 minutes or until heavy steam escapes the lid. Serve immediately after it’s done.

Vitamix recommends adjusting the stock to achieve the desired thickness.

10) Sweet Potato Soup

This is one of my favorites. It contains small onions, cooked sweet potatoes, apples, carrots, and vegetable broth. It has a 4.8-star rating on Vitamix’s website! It’s super easy to make but does take a bit of time since you’ll have to peel the onions and cook the sweet potatoes.

Place the ingredients into the Vitamix container in the order above, secure the lid, and you know the routine. Start at the lowest speed, switch to the highest, and blend for approximately 6 minutes. Once this is done, the soup is ready to be served immediately.

The onions have better flavor if cooked. You can technically use raw onions, but Vitamix recommends sauteing them before blending.
